WHere is an easy version of a beverage from the seasonal menu. This is a party-sized premix that is loaded full of flavours of the holiday season, which makes it ideal for a festive gathering. Reserve the remaining syrup for morning drinks, desserts, or to mix additional servings of bikinis.

Serves 10 guests
Ingredients for the Clementine Syrup (produces 750ml)
300ml fresh clementine juice
200ml recently pressed lemon juice
500g caster sugar
Ingredients for the Drink (produces 850ml, enough for 10)
400ml good quality vodka
100ml classic gin
150ml peach liqueur
200ml clementine syrup (as made above)
A few cranberries, to garnish
Mandarin essential oil, for finishing
Instructions
To prepare the Citrus Syrup: Put every components into a pan, bring to a simmer, mixing until the sugar dissolves. Then, take off the heat allowing it to reach room temperature completely. Transfer to a clean bottle, seal and refrigerate it chilled, it will last for up to a month.
For the Batch Mix: Pour every spirits and syrup into one sizeable container, allow it to infuse for 60 minutes, then filter it preferably using muslin, to ensure it's completely strained.
To serve: Measure 85ml of your cocktail base into a stirring glass containing ice, and stir carefully for a minute to cool it down. Pour into an chilled martini glass or equivalent, decorate with a few cranberries adding the final touch by giving it a light spray of mandarin oil over the drink.
